Fruit Roll-ups

These are a lot easier to make than you think! Here’s the recipe:

(Makes 4 to 6 fruit roll ups) 

Cooking spray

2 1/2 pounds of nectarines

6 tablespoons of freshly squeezed lemon juice

1/2 cup water

Preheat oven at 250 degrees. Spray one baking sheet with cooking spray.

Peel and pit nectarines, cut into 1″ cubes and mash.

In a medium saucepan, combine mashed nectarines, lemon juice and water. Bring to a boil over high heat, then reduce to medium heat, stirring often for 20-30 minutes. Nectarine mixture should reduce by one-third. Put mixture in food processor and puree.

Pour purée onto baking sheet and smooth to a thin layer.

Bake for 3 hours or until fruit roll up is tacky to the touch.

Once cooled, use pizza slicer to cut roll ups into four large rectangles. Roll individual rectangles and tie with bakers twine.

    What a great idea! The fruit roll ups I have made required drying trays that were set outside in the sun. A little extra protein was added, flies and knats. These are way better!
