Here’s a quick and easy meal for your little ones. We like these for breakfast, lunch or dinner and they are easy to freeze too!
Preheat oven to 350 degrees. Spray a standard muffin tin with nonstick cooking spray.
3 slices of Challah bread
1 Tablespoon of diced ham
1 Tablespoon of diced cheddar cheese
1 Tablespoon of diced red onion
1 Tablespoon of diced bell pepper
Pinch of salt and pepper.
Using a small cup or biscuit cutter, cut out six rounds of challah bread. Make sure rounds will fit into muffin tin before cutting. Place a challah rounds in muffin tin.
Whisk together remaining ingredients and pour over challah bread rounds. Bake for 17-20 minutes. Let cool slightly before serving.
